| W.I.N.E. is a 4 letter word is a wine store run by a wine maker in Daylesford. Wine maker Gabriel Horvat, manages this ‘cellar door’ style store, offering wine tasting and direct contact with the winemaker. “It is unusual for a winemaker to open a wine store completely detached from the winery, but we have found over the last few years that people find our vineyard and winery too far out of the way to visit. So, I decided to bring the opportunity to experience our limited production, single vineyard wines to them". Food is mainly tapas - antipasto, light desserts & cheeses - all chosen to highlight local produce. Live piano 8-11pm every Friday night.
Gabriel produces a super premium, single vineyard Shiraz from his father’s vineyard in the Pyrenees and selects premium fruit from vineyards around the Pyrenees/Grampians, to craft other super premium wines. His commitment to have direct contact with consumers to promote the wines has encouraged a number of small producers to join W.I.N.E. is a 4 letter word to sell their small runs of premium vintages. The range is being kept small through a strict selection criteria. All wines are sourced from boutique producers around Western Victoria and are assessed primarily on quality, as well as value and limited availability. The selection process also involves drinking the wines with food around the family dinner table.
